Black or red beans and rice
Chickpeas with peppers
Salads - from whole veggies, not precut
Pasta salad
Pasta and veggies with sauce
Pancakes/waffles/biscuits
Eggos with peanut butter
Greek yogurt or cottage cheese with fruit
Cereal with milk/soy milk and fruit
Hard boiled eggs w/asparagus or spinach
Avacado toast with peppers
Stirfried veggies with rice
Curried veggies with rice or flatbread
Homemade flatbread made w/greek yogurt & self rising flour
Refried bean burritos
Stuffed peppers/hot pepper poppers
Baked potatoes w/cheese, salsa, veggies, and/or beans
Quinoa w/veggies and vinaigrette
Rice and lentils with carrots
Veggie or fruit sticks/slices w/nut butter or cheesy dip
Lasagna rollups w/ricotta
Grilled portabella mushrooms with feta
Vegetable soup, miso soup w/rice noodles

I think there are a lot of variations on eggs, omelettes, frittatas that are inexpensive....stir fry that is just vegetables is also pretty cheap and this time of year we might just eat corn on the cob with a little buttter salt and pepper or just a tomato sandwich with mayo on white bread.

This weekend i made my homemade veggie broth, and then soup. It kept growing as i added things (that always happens 😋 ) Now i have tons, plus extra broth i can freeze, or use this week. To freeze, its a good idea to freeze in ice cube trays, then you move them to a freezer safe ziplock baggie. 😊
The broth is good for pasta, rice, veggies, (more soup, obviously,) grains like quinoa, farro, barley, or savory oats.

Believe it or not, homemade mac and cheese is very affordable and delicious. Mine is awesome. I can share the recipe if anyone wants it but I would be snapping a picture of my handwritten recipe book and you would have to deal with my handwriting. My recipe is enough for a full tray and a half of mac and cheese so when I make it we have leftovers for a week. I serve it with stewed tomatoes and its a whole meal. Its time consuming but worth it.
