Okay, here's one:

Turkey-Broccoli Divan

I got it from my No Time to Cook little recipe book from Campbell's.

  • 1 lb. fresh broccoli, cut into spears OR 1 10 oz. package frozen broccoli, cooked and drained
  • 1 1/2 cups cubed cooked turkey or chicken
  • 1 10 3/4 can Campbell's Cream of Broccoli soup
  • 1/3 cup milk
  • 1/2 cup shredded Cheddar cheese
  • 1 TBSP melted butter or margarine
  • 2 TBSP bread crumbs

  1. In 9" pie plate or 2 qt. oblong baking dish, arrange broccoli and turkey.
  2. In small bowl, mix soup and milk, pour over broccoli.
  3. Sprinkle cheese over soup mixture. In cup, mix crumbs and margarine. Sprinkle over cheese.
  4. Bake at 450 degrees for 20 minutes or until hot and bubbly. Makes 4 servings. Garnish with parsley or bread sticks.

You can use 1 10 oz. can chicken or turkey instead of cubed cooked turkey. If decide to cook, it's a real time saver to cook in advance like the day before. Or you can buy cooked cubed chicken too. If so, it's not that cheap anymore to make (the recipe itself is filling and economical, I think).

Use whatever creamed soup you like. I like Cream of Chicken for this (plus I don't see Cream of Broccoli at all at anytime) and cause I love cheese, I add 1 cup. Love breadcrumbs so I double that, and I just use 1/4 cup milk to keep sauce pretty thick.

It helps to grease the pan though it doesn't say so. I just found out it can STICK! If you don't like chicken, you can use beef or ham. Any meat is delicious with broccoli! At least I think so!

Another is Creamy Chicken Broccoli Bake

Also simple:

  • 1 1/4 lbs. boneless, skinless chicken, cubed (about 4 breast halves)
  • 1 1/2 cups Minute Original Rice, uncooked
  • 1 1/4 cups milk
  • 1 10 oz. pkg. frozen chopped broccoli-thawed and drained
  • 1/2 lb. (8 oz.) Velveeta Pasteurized Process Cheese Spread, cut up
  • 1/2 cup Miracle Whip Light Dressing

  1. Mix all ingredients well. (I use a deep, large bowl)
  2. Spoon into 12" x 8" x 3" baking dish.
  3. Bake a 375 degrees 30 minutes or until chicken is cooked thoroughly.

I don't know if you're supposed to cover it cause it doesn't say, but I do. And I grease the pan too so it won't stick. I only tried this once, but I used shredded cheese instead of Velveeta. I don't like Minute Rice--it's too dry so I stir cooked rice into it when it's done.

Of course you can modify it how you want, like use fresh broccoli instead of frozen. I think frozen broccoli is mushy, and I don't like that. I also use low fat milk.
